I just bought the NS-R5101HD receiver and I hooked it up with a good hdmi 1.3 cable to my PS3 (with the latest firmware updates). The problem is the receiver does not say "DTS HD" or True HD... (the little lights do not light up).
I've checked with Sony and they said:
"For Blu-ray discs that can output in Dolby True HD and DTS Master Audio you must select Linear PCM as the Audio Output." (I've done this already).
My question: How do I set up the NS-R5101 HD receiver so I can hear the Dolby True HD /DTS Master Audio when playing a blu-ray disc from my PS3?

To help clarify:
The Sony PS3 can only output Dolby True HD and DTS Master Audio in Linear PCM (and not bitstream). This is directly from the Sony website:
"For Blu-ray discs that can output in Dolby True HD and DTS Master Audio you must select Linear PCM as the Audio Output."
I have read that the Insignia receiver will not say "Dolby True HD" when the source is coming in as PCM. Is this true?
So my question: with the Insignia NS-R5101HD receiver, what is the best setting that I should have it on to get the best sound from the Dolby True HD/DTS master audio coming from a blu-ray disk on a PS3?

The issue with PCM is that depending if it's Linear or Bitstream, the decoding of the signal will be done by the PS3 or the Receiver. If you could be able to set the PS3 to bitstream whatever's on the disc would be sent to the receiver without any decoding, setting to Linear PCM causes it to be converted to PCM in the player before sending it. Hence, when playing the PCM soundtrack, the receiver gets PCM regardless of the setting. The receiver showing the HD icons will mean that it is the one responsible of the decoding while, if the process is taken care off at the PS3 end, the signal is just whatever the PS3 sends. Regardless who decodes it, you should be getting the same audio output quality.

Whats the best setting to use on the receiver for this issue? Multichannel?

I would suggest pressing the Surround Up button on the remote until "Auto" lights up on the display of the receiver.
